This name would have been popular during the time that pink was considered a masculine color. This was because of it's similarity to the color red, which would make it symbolic of the blood of Christ or the element of fire, depending on how far back into history you want to go. Blue was a feminine color, symbolic of the Virgin Mary or the moon and the Greek goddess Diana. The two colors switched genders in the public's mind around the 1940's.

Another possible meaning is that Pink is a short form of Patrick.
