Éamon de Valera is not only the most famous bearer of this name, but the creator of it. Born George de Valera, but called Edward, de Valera was born in the US in 1882. He emigrated to Ireland (birth place of his mother) and upon entering politics gaelicised his name from Edward to Éamon, a variation of Éamonn. De Valera eventually went on to be President of Ireland from 1959 to 1973.
